FREEZER BEEF (Whole, Half, Quarter) Save money and customize your order

We sell whole, half, and quarter freezer beef by appointment:
BEEF (Whole, Half, or Quarter):    $4.75 Rail Weight plus butchering cost

Interested in buying Freezer Beef? Here's how it works:
  • We make a butcher appointment (which may need to be made months ahead of time), then deliver the animal to the butcher on that date.
  • In a couple of days, we call the butcher and get the hanging weight (of the halves hanging in the cooler). We would then email you the total due us, and you send a check to us right away or pay by credit card.
  • Right after you get the total from us you will need to call the butcher and give them cutting instructions. This can be confusing if you haven't done it before, but they walk you through it. For example, how big do you want the roasts, do you want any soup bones, do you want all roasts boneless, do you want butcher paper or vacuum pack (plastic)?
  • Of the hanging weight, there is further waste (trimmings and bones). This can vary quite a bit based on the cutting. (For example, all ground meat would be fewer pounds than including all bone-in roasts and soup bones.) When all of the cutting and packaging is done, the butcher calls you and you go pick up your frozen packages of meat and pay the butcher his charges.

Freezer Beef dollars and yield information:
  • Live weight for beef ranges from 950-1300 lbs or so. Let's assume a live weight of 1050 lbs. for our whole beef example.
  • Hanging (Rail) weight for beef is typically 55% of live weight, so our hanging weight is 578 lbs. for our whole beef.
  • Payment to the farmer is $4.75/lb. of hanging weight. (If you get Half or Quarter beef, the same price per pound applies to half or one quarter of the hanging weight.) So, hypothetically, for cost, you've got 578 lbs. x $4.75= $2,745.50 paid to the farmer (us).
  • Payment to the butcher varies depending on the butcher, cutting instructions, and steer weight; probably $400-$600 or so. Let's say $500 for payment to the butcher for this hypothetical whole steer. (If you get Half or Quarter beef, the butcher price will be roughly half or a quarter of the whole beef butcher cost.)
  • Total cost (payment to the farmer plus payment to the butcher) is $3,245.50 in our whole beef example.
  • Packaged meat weight for our hypothetical whole steer might be around 350 lbs. (This amount of meat will approximately fill a large (14.5 cubic foot) chest freezer.)
  • Therefore, the Cost per pound of the packaged meat is $9.27/lb. (for filet mignon as well as ground beef!).
  • If you order Quarter beef, you will get a mix of front and back quarter meat; that is, you will get half of a front quarter and half of a back quarter which together make up one quarter of the whole hanging weight.
